Spicy Cheese Omelet with Green Onion

Omelet prepared from egg, egg substitute, hot sauce, vegetable juice, green onion, fresh ground black pepper, and cheddar cheese.

Ingredients -
2 cups Egg Substitute
1 Large Egg
1/2 teaspoon Hot Sauce
1/4 cup Vegetable Juice
3 tablespoons chopped Green Onion
1/8 teaspoon Fresh Ground Black Pepper
1/2 cup Shredded Reduced Fat Cheddar Cheese
 
Preparation:

1. Add egg substitute, egg and hot sauce to medium bowl. Whisk the mixture until frothy.

2. Heat the vegetable juice in large nonstick skillet over medium heat.

3. Add green onions and pepper and cook, stirring until onions are tender but not browned.

4. Reduce heat to low and pour in egg mixture.

5. When nearly set, sprinkle shredded cheddar cheese over one half omelet.

6. Fold omelet in half and slip onto warm serving plate.

Eggs from local farmers and farmers markets from field grazed chickens raised without hormones and antibiotics may cost a little more but the difference in quality and taste is worth the price.

Storing Eggs

Eggs should not be stored in the door as it is the warmest part of the refrigerator. Store eggs in their original protective packaging to lessen the chance of eggs absorbing surrounding odors, and to avoid temperature fluctuations.
